Super Simple Green Tahini Dressing

Ingredients

  • 1/2 cup olive oil
  • 1/2 cup water
  • 1/4 cup @ohmega_nutbutters tahini
  • a big bunch of coriander and parsley
  • 1/2 tsp maple syrup
  • 1 clove garlic
  • Squeeze of half a lemon (about 2 tablespoons)
  • 1/2 teaspoon salt, plus more to taste

Preparation

  1. Blend all sauce ingredients in a food processor or blender until smooth.

  2. Taste and adjust seasoning.

  3. If the sauce is too runny, add a little more tahini.

  4. If it’s too thick, add some more water.

Tahini tips

  1. Always check the expiry date of tahini before using.

  2. Taste tahini to ensure it's not rancid; it should be toasty and nutty with only slight bitterness.

  3. Refrigerate opened tahini to prevent rancidity due to high omega 6 fats.

  4. Stir tahini well before refrigerating as it becomes hard to mix when chilled.
