Sweet and Sour Beet Salad

Ingredients

  • 400 grams cooked red beets
  • 1 red onion, chopped
  • 1 tablespoon sumac
  • 75 grams pickled turnip (or pickled red onion)
  • 2 sprigs parsley, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon erythritol (sugar substitute)

Preparation

  1. Peel the beets and cut into cubes.

  2. Chop the onion, finely chop the parsley, and cut the pickled turnip into small cubes.

  3. Put all ingredients in a bowl, add the sumac, olive oil, red wine vinegar, and erythritol, then mix well.

  1. Use disposable kitchen gloves to prevent staining your fingers.
