Sweet Potato Fries with Beet Ketchup
Ingredients
Sweet potato fries
- Japanese sweet potatoes
- Regular sweet potatoes
- Salt
- Pepper
- Paprika
Beet ketchup
- 2 large roasted beets (peeled and cubed)
- 1/2 cup apple cider vinegar
- 14 pitted dates
- 1/4 teaspoon ground clove
- 1/2 teaspoon fresh ginger
- 1/2 teaspoon onion powder
- 1 clove toasted garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Pinch of red pepper flakes
Preparation
Preheat oven to 425°F
Cut the sweet potatoes into fry-shaped pieces
Toss the sweet potato fries with salt, pepper, and paprika
Spread the fries on a baking sheet and bake for 20-25 minutes until crispy
For the beet ketchup, combine all ingredients in a blender and blend until smooth
Serve the sweet potato fries with the beet ketchup
