Sweet Potato Fries with Beet Ketchup

Ingredients

Sweet potato fries

  • Japanese sweet potatoes
  • Regular sweet potatoes
  • Salt
  • Pepper
  • Paprika

Beet ketchup

  • 2 large roasted beets (peeled and cubed)
  • 1/2 cup apple cider vinegar
  • 14 pitted dates
  • 1/4 teaspoon ground clove
  • 1/2 teaspoon fresh ginger
  • 1/2 teaspoon onion powder
  • 1 clove toasted garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Pinch of red pepper flakes

Preparation

  1. Preheat oven to 425°F

  2. Cut the sweet potatoes into fry-shaped pieces

  3. Toss the sweet potato fries with salt, pepper, and paprika

  4. Spread the fries on a baking sheet and bake for 20-25 minutes until crispy

  5. For the beet ketchup, combine all ingredients in a blender and blend until smooth

  6. Serve the sweet potato fries with the beet ketchup
