Vegan Aquafaba Meringues for Valentine's Day

Ingredients

  • Liquid from a can of chickpeas (aquafaba)
  • 1/2 teaspoon xanthan gum
  • 1 cup monk fruit, erythritol, xylitol, or coconut sugar
  • Pitaya powder (optional)

Preparation

  1. Whip the aquafaba and xanthan gum on high speed for approximately 15 minutes until stiff peaks form.

  2. Once the mixture is stiff, glossy, and full (not foamy), slowly fold in the sugar until just mixed.

  3. If using, fold in the pitaya powder for color.

  4. Scoop the mixture onto a baking mat or parchment paper.

  5. Bake at 200°F for about 2 hours.

  6. Remove from the oven and let cool.

  7. Use the meringues to decorate desserts.
