Vegan Cashew Cheese Sauce with Pasta

Ingredients

  • 1 cup raw cashews
  • 1 cup water
  • 0.25 cup nutritional yeast
  • 1 tsp sea salt
  • 0.5 tsp lemon juice
  • 0.5 tsp turmeric, ground
  • 0.3 tsp garlic powder
  • 3 cups dry whole wheat elbow pasta

Preparation

  1. Boil cashew nuts for 10 minutes, drain and rinse

  2. Cook the pasta

  3. Add all the cheese sauce ingredients into a blender and mix until smooth

  4. Pour the cheese sauce over the cooked pasta. Serve with steamed kale and sprinkle some smoked paprika powder on top!
