Vegan Chocolate Chunk Quinoa Cookies

Ingredients

  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1/4 cup liquid coconut oil (melt in microwave)
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup
  • 1 1/4 cups quinoa flour
  • 2 tablespoons coconut flour
  • 2 teaspoons baking powder
  • 1/2 cup Hu Kitchen vegan chocolate bar, chopped

Preparation

  1. Preheat the oven to 350 degrees Fahrenheit

  2. Mix the wet ingredients in a bowl first.

  3. Add the dry ingredients to the wet ingredients bowl.

  4. Chop half of the chocolate bar and mix into the dough, save the other half to add on top.

  5. Roll into balls and place on parchment paper.

  6. Bake at 350 degrees for 8-10 minutes.
