Vegan Banana Bread Bites

Ingredients

  • 3 ripe bananas
  • 1/3 cup nut butter of choice or granola butter for nut-free option
  • 2/3 cup coconut flour
  • 1/3 cup maple syrup
  • 1 tsp baking powder
  • 1/4 cup blueberries (optional)

Preparation

  1. In a bowl, mix all of the ingredients besides the blueberries together well.

  2. Then fold in the blueberries.

  3. Line an 8x8 brownie pan with parchment paper.

  4. Add the batter in.

  5. Bake at 350F for 32-34 minutes.

  6. These are pretty soft so you can put them in the fridge to firm up for 30 minutes if you want or let them cool on the counter, slice, add some more Pb, and enjoy.
