Vegan Flower Art Kaju Katli (Cashewnut Treats)

Ingredients

  • Almond powder - 2 cups
  • Sugar (Raw sugar) - 1 cup
  • Coconut oil - 1 tablespoon
  • Coconut milk powder - 4 tablespoons
  • Almond essence - 1 teaspoon
  • Water - 1/2 cup

Preparation

  1. In a pan, add water and then add sugar. Mix well and dissolve the sugar until a one-string consistency is attained.

  2. Once you achieve this consistency, transfer it to a nonstick pan. Add almond powder, coconut milk powder, almond extract, and coconut oil. Give it a quick mix.

  3. Cook on low-medium heat until the mixture turns into a smooth batter consistency with no lumps. Be careful not to overcook it. Switch off the heat when the consistency becomes firm but not hard.

  4. Transfer the mixture onto a butter paper. Use a spatula to fold it until it forms a firm dough.

  5. Place another butter paper on top of the dough and use a rolling pin to roll it into a thin, flat shape.

  6. Optionally, decorate the dough with edible flowers and nuts of your choice. Cut it into shapes as desired.

  7. Keep the treats in an airtight container and enjoy. They can be stored in the fridge for up to a month.
