Delectable Vegan Dessert Trio

Ingredients

Peanut Butter Jelly Date Bombs

  • 12 Medjool dates
  • 1/4 cup peanut butter
  • 1/4 cup berry chia jam
  • 20g dark vegan chocolate, melted
  • Handful of chocolate chunks
  • Handful of peanut halves
  • Pinch of sea salt

Chocolate Blueberries

  • Melted chocolate
  • Optional: Coconut oil
  • Fresh blueberries

Frozen Snickers Bites

  • Medjool dates, soaked for 15 minutes
  • Chopped frozen bananas
  • Peanut butter
  • Melted dark chocolate

Preparation

Peanut Butter Jelly Date Bombs

  1. Slice one side of each Medjool date and carefully remove the pit.

  2. Add a thin layer of berry chia jam into the dates using a spoon or piping bag. Spread evenly, then add a dollop of peanut butter.

  3. Melt the dark vegan chocolate and push chocolate chunks and peanut halves into the peanut butter layer. Dip the whole date into the chocolate or drizzle chocolate on top.

  4. Place the filled dates in the fridge or freezer. Enjoy when they are cold and chewy!

Chocolate Blueberries

  1. Melt the chocolate and add coconut oil if desired.

  2. Spoon some melted chocolate onto a sheet of baking paper, add fresh blueberries, and drizzle more chocolate on top.

Frozen Snickers Bites

  1. Soak the Medjool dates for 15 minutes, then blend them until smooth. Add some soaking liquid if needed.

  2. Chop the frozen bananas, add peanut butter and the date paste. Freeze until solid.

  3. Melt the vegan chocolate, cover each bite on all sides, and freeze until solid. Enjoy!
