Vegan Chocolate Covered Strawberry Brownie Bites

Ingredients

Brownie Bites

  • 1/2 mashed ripe banana
  • 1/2 cup nut butter
  • 1/4 cup cocoa powder
  • 1/4 cup coconut sugar

Chocolate Covered Strawberries

  • 12 strawberries
  • 1 cup vegan chocolate chips
  • 1 tsp coconut oil

Preparation

Brownie Bites

  1. Mix the mashed banana, nut butter, cocoa powder, and coconut sugar together in a bowl.

  2. Grease a mini cupcake tin.

  3. Fill each cup almost to the top with the batter.

  4. Bake at 350°F (175°C) for 17 minutes.

  5. Allow the brownie bites to cool slightly, then remove them from the tin.

Chocolate Covered Strawberries

  1. Melt the vegan chocolate chips and coconut oil together by microwaving in 30-second intervals, stirring in between, until fully melted.

  2. Remove the tops of the strawberries.

  3. Once the brownie bites are done and cooled, place a strawberry on top of each brownie bite.

  4. Drizzle the melted chocolate mixture over both the strawberry and the brownie, ensuring the chocolate adheres to both.

  5. Place the prepared bites in the freezer for about 1 hour or until the chocolate has hardened.

  6. Store the finished Chocolate Covered Strawberry Brownie Bites in the freezer and remove them about 5 minutes before consuming.
