Vegan Shredded Tofu Tacos
Ingredients
- 1 block tofu
- 1/3 onion
- 1/3 red pepper
- 2 tbsp olive oil
- 2 tbsp tomato sauce
- al pastor seasoning blend
- salt
- pepper
Cilantro lime sauce
- 1 bunch cilantro
- 4 tbsp mayo or yogurt
- juice of 1/2 lime
- 2 cloves garlic
- salt
- pepper
Other components
- tortillas
- coleslaw
- cilantro
Preparation
Press and shred the tofu.
Add it to a pan with olive oil and cook on medium heat until golden brown.
Add the seasoning and tomato sauce, then mix well.
Transfer to another dish.
Cook the onions and peppers on medium heat.
Add the tofu back to the pan and stir together.
Add all the ingredients for the sauce to a blender and blend until smooth.
Assemble the tortillas with the filling.
Notes
This recipe makes filling for 6-8 tacos.
