Vegan Sourdough Pizza with Tofu Topping
Ingredients
Pizza dough
- 4 1/2 cups bread flour
- 2 teaspoons salt
- 1 1/2 teaspoons dry instant yeast
- 3 tablespoons olive oil
- 1 1/4 cup warm water
- 1 cup sourdough discard
Toppings
- tofu
- sage
- white pepper
- vegan mozzarella
- tomatoes
- basil
- garlic
- balsamic vinegar
Preparation
Whisk together the flour, salt, and yeast.
Mix in the remaining ingredients using a heavy wooden spoon.
Knead for 5-10 minutes until the dough is smooth.
Place into an oiled and covered bowl and allow to double in size.
Divide into 4 equal pieces.
Roll each into a smooth ball.
Allow to rest, covered, for 30 minutes if using immediately.
Turn oven to highest temperature and use a preheated baking stone or baking steel.
Build the pizza and bake for 10-12 minutes.
Topping
Marinate tofu with sage and white pepper for at least 30 minutes
Prepare bruschetta by dicing tomatoes, chopping basil and garlic, and mixing with olive oil
Reduce balsamic vinegar to make a thick reduction
