Vegan Stuffed Flatbread with Potatoes
Ingredients
Dough
- 2.5 cups flour
- 1 cup water
- 1/2 tsp salt
- 2 tbsp olive oil
Filling
- 3 medium potatoes
- 1 tbsp olive oil or vegan butter
- salt and pepper to taste
- vegan pesto of choice
- shredded vegan cheese
Preparation
Mix the dough ingredients and knead until you have a soft dough, then cover and set aside for 30 minutes.
Boil the potatoes until soft, mash them, add olive oil or vegan butter, and season with salt and pepper to taste.
Cut the dough into equal portions, roll it out, and fill with the mashed potatoes, vegan pesto, and shredded vegan cheese, then close the dough to seal.
Cook both sides in a pan on medium heat until golden brown.
Brush with a little olive oil or melted butter mixed with fresh herbs of choice and serve hot.
