Watermelon Bruschettas with Cucumber Yuzu Tartare

Ingredients

  • 1 medium watermelon

Cucumber yuzu salad

  • 5 Persian cucumbers
  • 2 radishes
  • 1/2 medium size jalapeño
  • 2 tbsp Yuzu vinegar
  • Handful of mint
  • Pinch of salt

Preparation

  1. Slice the watermelon into 1/2 inch circles and use a cookie cutter to make star shapes, aiming for 18-20 pieces, or cut into squares as an alternative.

  2. Slice and cut 5 Persian cucumbers into small cubes.

  3. Slice and cut 2 radishes into small cubes.

  4. Seed and chop 1/2 medium jalapeño.

  5. Chop a handful of mint.

  6. Combine all salad ingredients: cubed cucumbers, radishes, chopped jalapeño, mint, 2 tbsp Yuzu vinegar, and a pinch of salt.

  7. Season the salad with more Yuzu vinegar if needed.

  8. Top the prepared watermelon pieces with the cucumber yuzu salad.

  9. Serve chilled.
