Watermelon Bruschettas with Cucumber Yuzu Tartare
Ingredients
- 1 medium watermelon
Cucumber yuzu salad
- 5 Persian cucumbers
- 2 radishes
- 1/2 medium size jalapeño
- 2 tbsp Yuzu vinegar
- Handful of mint
- Pinch of salt
Preparation
Slice the watermelon into 1/2 inch circles and use a cookie cutter to make star shapes, aiming for 18-20 pieces, or cut into squares as an alternative.
Slice and cut 5 Persian cucumbers into small cubes.
Slice and cut 2 radishes into small cubes.
Seed and chop 1/2 medium jalapeño.
Chop a handful of mint.
Combine all salad ingredients: cubed cucumbers, radishes, chopped jalapeño, mint, 2 tbsp Yuzu vinegar, and a pinch of salt.
Season the salad with more Yuzu vinegar if needed.
Top the prepared watermelon pieces with the cucumber yuzu salad.
Serve chilled.
