Avocado Toast with Raw Zucchini Salad and a Side of Hummus

Ingredients

  • ZUCCHINI SALAD
  • (ingredients for 2 - pictured above is half this portion)
  • 2 small zucchinis, cut super thinly
  • 1 small yellow zucchini, cut super thinly
  • 2 radishes, cut super thinly
  • (optional) chives (or parsley / dill)
  • toppings: roasted almonds
  • Dressing
  • 2 tbsp olive oil
  • 1 lemon juice
  • zest of 1 lemon
  • 2 garlic cloves minced
  • salt

Preparation

  1. I used a mandolin to cut the zucchinis and radishes very thinly and then cut them in even smaller pieces with a knife

  2. Mix the dressing, taste for saltiness and mix it all together with the veggies and let them soak the dressing in the fridge for 1 hour or so. It tastes even better after a few hours. Top with almonds and fresh herbs (chives or parsley or dill)

  3. P.s if you still eat dairy it would taste amazing with feta or goat cheese

  4. AVO TOAST

  5. Piece of bread toasted with 1/2 avocado mashed on top with salt, lemon juice and red chili flakes
