Wholesome Festive Rocky Road Dessert
Ingredients
- 1/2 c dates, packed
- 3/4 c melted coconut oil
- 1/2 c cocoa powder
- 1/2 tsp salt flakes
- 1/2 c cinnamon granola (I used coconut granola from @goodiesandgrains)
- 1/4 c dark sultanas
- 1/2 c mini vegan marshmallows
- 1/4 c mixed raw nuts, chopped roughly
Preparation
In a food processor, blend the dates, coconut oil, cacao powder, and sea salt until combined.
In a separate bowl, add the blended mixture, then add the sultanas, granola, marshmallows, and nuts; stir all with a spoon to combine.
Spoon into a small lined baking tin and garnish with dried rose petals and desiccated coconut, then freeze for 30 minutes.
Cut to your preference and serve.
Store in the refrigerator in an airtight container.
Tips
Food is abundant, especially at this time of year. There is no need to eat it all now! Remind yourself you can eat more later.
