Nigerian Peanut Donkwa Balls

Ingredients

  • 1 1/2 cups peeled, unsalted peanuts
  • 1 cup medium grind cornmeal
  • 1 tbsp brown sugar
  • Pinch of salt
  • 1/2 tsp chilli powder
  • 3-4 tbsp peanut oil

Preparation

  1. If the peanuts aren’t already roasted, add them to a dry frying pan and toast over medium-high heat, stirring frequently until golden all over

  2. Transfer to a heat-proof dish and leave to cool for 5 minutes

  3. Add the cornmeal to the frying pan and toast over medium-high heat for 4-5 minutes, stirring frequently

  4. Take off the heat and leave to cool

  5. Place the roasted peanuts in a food processor and blend until it starts to resemble peanut butter

  6. Add the roasted cornmeal to the food processor, along with the sugar, salt, and chilli powder

  7. Blend until all the ingredients are well combined and the texture is crumbly

  8. You may need to scrape down the sides and blend several times

  9. Transfer the mixture into a mixing bowl and add the peanut oil, a little at a time, until the mixture holds its shape when squeezed together

  10. Use your hands to shape and mould the mixture into compact, bite-sized balls and place them on a serving dish
