Arabic Meat Vermicelli Soup
Ingredients
- 250 grams meat, cut into 1cm pieces
- 2 tablespoons olive oil
- 1 tablespoon ghee
- 1 small onion, chopped
- 2 cloves garlic, crushed
- 1 tablespoon ginger, crushed
- 3 large tomatoes, peeled and finely chopped
- 2 tablespoons tomato paste
- 1 teaspoon mixed spices
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup vermicelli
- 2 tablespoons lemon juice
Garnish

Preparation
In a pot, heat 2 tablespoons of oil, add the meat, stir until it dries out, add the onion and garlic, and stir for a few minutes
Add the tomatoes, tomato paste, mixed spices, turmeric, cumin, salt, and pepper, and let the mixture cook for a few minutes
Cover the meat with water and let it cook for half an hour until fully cooked
In a skillet, heat 1 tablespoon of oil and ghee, add the vermicelli, and stir until golden
Add the vermicelli to the meat mixture
Wait a few minutes for the vermicelli to cook
Add more water as needed to achieve the desired soup consistency
Add lemon juice, sprinkle with parsley, and serve
