Arabic Meat Vermicelli Soup

Ingredients

  • 250 grams meat, cut into 1cm pieces
  • 2 tablespoons olive oil
  • 1 tablespoon ghee
  • 1 small onion, chopped
  • 2 cloves garlic, crushed
  • 1 tablespoon ginger, crushed
  • 3 large tomatoes, peeled and finely chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon mixed spices
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vermicelli
  • 2 tablespoons lemon juice

Preparation

  1. In a pot, heat 2 tablespoons of oil, add the meat, stir until it dries out, add the onion and garlic, and stir for a few minutes

  2. Add the tomatoes, tomato paste, mixed spices, turmeric, cumin, salt, and pepper, and let the mixture cook for a few minutes

  3. Cover the meat with water and let it cook for half an hour until fully cooked

  4. In a skillet, heat 1 tablespoon of oil and ghee, add the vermicelli, and stir until golden

  5. Add the vermicelli to the meat mixture

  6. Wait a few minutes for the vermicelli to cook

  7. Add more water as needed to achieve the desired soup consistency

  8. Add lemon juice, sprinkle with parsley, and serve
