Spiced Bulgur with Tomatoes

Ingredients

  • 1.5 cups coarse bulgur
  • 2 tablespoons ghee or olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 0.5 red bell pepper, chopped
  • 0.5 green bell pepper, chopped
  • 1 can tomato paste
  • 1 teaspoon mixed spices
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2.5 cups broth or water

Preparation

  1. Wash the bulgur and soak it in water for 10 minutes.

  2. In a medium-sized pot, heat the ghee or oil, add the onion and garlic and stir until the onion is golden brown, then add the red and green peppers and stir for a few seconds.

  3. Add the bulgur and stir for about 2 minutes, then add the tomato paste, mixed spices, cumin, coriander, cinnamon, salt, and pepper, and stir to mix.

  4. Add the broth, bring to a boil, reduce the heat, cover the pot, and let it cook for 30 minutes until the broth is absorbed and the bulgur is done.
