Spiced Bulgur with Tomatoes
Ingredients
- 1.5 cups coarse bulgur
- 2 tablespoons ghee or olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 0.5 red bell pepper, chopped
- 0.5 green bell pepper, chopped
- 1 can tomato paste
- 1 teaspoon mixed spices
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 0.25 teaspoon black pepper
- 2.5 cups broth or water
Preparation
Wash the bulgur and soak it in water for 10 minutes.
In a medium-sized pot, heat the ghee or oil, add the onion and garlic and stir until the onion is golden brown, then add the red and green peppers and stir for a few seconds.
Add the bulgur and stir for about 2 minutes, then add the tomato paste, mixed spices, cumin, coriander, cinnamon, salt, and pepper, and stir to mix.
Add the broth, bring to a boil, reduce the heat, cover the pot, and let it cook for 30 minutes until the broth is absorbed and the bulgur is done.
