Caramel Pudding Cups
Ingredients
- 1/2 cup butter
- 1/2 cup flour
- 4 cups milk
- 1/2 cup sugar
- 1 teaspoon liquid vanilla
Caramel
- 1 cup sugar
- 2 cups hot water
- 2 tablespoons starch
Garnish
- Aleppo pistachios
- dried rose
Preparation
Heat 1 cup of sugar in a saucepan over medium heat until it caramelizes.
Add 2 cups of hot water and 2 tablespoons of starch to the caramel, stirring constantly until the mixture thickens, then set aside.
In a separate saucepan, melt 1/2 cup of butter over medium heat.
Stir in 1/2 cup of flour and cook for 1-2 minutes to form a roux.
Gradually add 4 cups of milk while stirring constantly to prevent lumps.
Mix in 1/2 cup of sugar and 1 teaspoon of liquid vanilla, and cook until the mixture thickens.
Pour the pudding into individual cups.
Layer or mix in the caramel sauce as desired.
Refrigerate until set, typically for 2-4 hours.
Add garnish before serving.
