Caramel Pudding Cups

Ingredients

  • 1/2 cup butter
  • 1/2 cup flour
  • 4 cups milk
  • 1/2 cup sugar
  • 1 teaspoon liquid vanilla

Caramel

  • 1 cup sugar
  • 2 cups hot water
  • 2 tablespoons starch

Garnish

  • Aleppo pistachios
  • dried rose

Preparation

  1. Heat 1 cup of sugar in a saucepan over medium heat until it caramelizes.

  2. Add 2 cups of hot water and 2 tablespoons of starch to the caramel, stirring constantly until the mixture thickens, then set aside.

  3. In a separate saucepan, melt 1/2 cup of butter over medium heat.

  4. Stir in 1/2 cup of flour and cook for 1-2 minutes to form a roux.

  5. Gradually add 4 cups of milk while stirring constantly to prevent lumps.

  6. Mix in 1/2 cup of sugar and 1 teaspoon of liquid vanilla, and cook until the mixture thickens.

  7. Pour the pudding into individual cups.

  8. Layer or mix in the caramel sauce as desired.

  9. Refrigerate until set, typically for 2-4 hours.

  10. Add garnish before serving.
