Creamy Apricot Milk Pudding

Ingredients

  • 4 tablespoons starch
  • 2.5 cups milk
  • 2 tablespoons butter
  • 1 teaspoon liquid vanilla
  • 1/2 cup sugar
  • 2 cups canned apricot halves
  • 1 cup canned apricot syrup

Preparation

  1. Prepare 4 individual serving dishes.

  2. In a medium-sized thick-bottomed pot, combine starch and milk. Stir with a hand whisk until starch dissolves.

  3. Place the pot on medium heat and stir the mixture with a wooden spoon until it boils and thickens, about 3 to 4 minutes.

  4. Remove from heat, add butter, vanilla, and sugar, and stir until sugar dissolves. Allow to cool.

  5. In a blender, puree half of the canned apricots with their syrup on medium speed.

  6. Add the apricot puree to the cooled milk mixture and stir to combine.

  7. Divide the pudding mixture among the serving dishes and refrigerate for at least one hour or overnight.

  8. Before serving, top with the remaining apricot halves and serve.
