Grilled Bell Peppers with Quinoa and Meat
Ingredients
- 3 large bell peppers (assorted colors)
- 2 tablespoons olive oil
- a pinch of salt
- a pinch of black pepper
Quinoa
- 1/2 cup quinoa
- 1 cup broth
Meat filling
- 1 tablespoon olive oil
- 200 grams ground meat
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1/2 teaspoon crushed chili
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium chopped onion
- 2 cloves crushed garlic
- 1 large chopped tomato
- 1/2 cup cooked corn
- 1 cup chopped fresh cilantro
For serving
- pickled green peppers
Preparation
Cook quinoa in broth until tender and liquid is absorbed.
Heat olive oil in a skillet over medium heat and sauté chopped onion and crushed garlic until fragrant.
Add ground meat and spices, cook until meat is browned and fully cooked.
Stir in chopped tomato, cooked corn, and chopped fresh cilantro, and heat until well combined.
Brush bell peppers with olive oil, season with salt and black pepper, and grill until tender and slightly charred.
Assemble the dish by stuffing the grilled peppers with the meat mixture and quinoa or serving them together on a plate.
Garnish with pickled green peppers before serving.
