Fried Kofta with Cheese
Ingredients
Kofta
- 600 grams ground meat
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 1/2 cup breadcrumbs
- 2 tablespoons chopped parsley
- 2 cloves minced garlic
- 1 bell pepper chopped
- 1 large egg
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed chili
- 1/2 teaspoon oregano
Sauce
- 1 tablespoon olive oil
- 1 medium onion chopped
- 2 cloves minced garlic
- 4 medium tomatoes chopped
- 1/4 cup ketchup
Garnish
- Chopped parsley
Preparation
In a bowl, place the meat, half the cheese, breadcrumbs, parsley, garlic, bell pepper, egg, cumin, salt, black pepper, paprika, crushed chili, oregano and mix the ingredients together.
Shape the mixture into balls of desired size and refrigerate for 10 minutes to allow ingredients to meld and breadcrumbs to absorb flavors.
In a skillet, heat oil, add the balls and fry on all sides until golden brown, then remove and set aside.
In the same skillet, add onion and garlic, stir until wilted, then add tomatoes, ketchup, stir to combine and add about half a cup of water.
Return the kofta balls to the sauce, cover and cook for a few minutes until kofta is cooked.
Sprinkle the remaining cheese over the kofta, cover and cook for a few minutes until cheese melts.
Sprinkle parsley and serve hot.
