Spiced Oven-Baked Arabic Rice
Ingredients
- 2 cups Egyptian rice
- 1 medium onion, finely chopped
- 2 teaspoons salt
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon black pepper
- 3 cups full-fat milk
- 1 cup kaymak or clotted cream
- 2 tablespoons ghee or butter
Preparation
Wash the rice several times and soak it for 30 minutes.
Place the oven rack in the middle and preheat the oven to 180°C.
Prepare a ceramic baking dish or tagine and grease it with ghee.
In a deep bowl, combine the onion, salt, cinnamon, ground cloves, and black pepper. Rub the mixture with your fingertips to mix well. Add the rice and stir to combine, then transfer to the prepared dish.
In a medium pot, combine the milk, kaymak, and ghee. Heat over medium heat, stirring with a hand whisk until the ghee melts and the mixture is warm.
Pour the milk mixture over the rice in the dish and cover with aluminum foil.
Bake in the preheated oven for 50 minutes or until the rice is fully cooked.
Remove the foil and broil under the oven broiler for a few seconds until the rice is dark golden.

Serve the baked rice with roasted chicken or pigeon.
