Starch Ghribah Cookies

Ingredients

  • 2 cups starch
  • 1 teaspoon baking powder
  • 1 cup fine powdered sugar
  • 3 large egg whites
  • 1 teaspoon liquid vanilla
  • 1/4 cup soft butter
  • 1/4 cup flour

Garnish

  • melted chocolate
  • finely ground pistachio

Preparation

  1. Prepare shallow-rimmed baking trays and preheat the oven to 180°C.

  2. Sift the starch, baking powder, and flour, and set aside.

  3. In the mixer bowl, place the sugar, egg whites, vanilla, and butter. Attach the whisk attachment and beat until the mixture is fluffy.

  4. Remove the whisk attachment and attach the paddle. Add the sifted mixture and mix gently until combined.

  5. Take small amounts of dough and shape into small balls.

  6. Place the balls on the tray, leaving space between each.

  7. Bake for 10 minutes and let cool completely.

  8. Garnish with melted chocolate and pistachio, then serve.

Notes

  1. The cracks on the surface are characteristic due to the starch content.
