Beet Carpaccio with Goat Cheese, Walnuts, and Figs

Ingredients

  • pre-cooked red beet
  • fresh figs
  • wild herb mix with blossoms
  • yuzu truffle dressing
  • pea sprouts
  • radish rioja sprouts
  • honey
  • goat cheese with noble mold
  • walnut kernels

Preparation

  1. Slice the red beets very finely and arrange them on a plate.

  2. Brown the walnuts and deglaze with a little honey to caramelize.

  3. Briefly brown the goat cheese on both sides and place it in the center on the beet slices.

  4. Decorate with the caramelized walnuts, pieces of figs, and greens, then drizzle with truffle dressing.
