Mapo Tofu Stir-Fry with Chicken

Ingredients

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 cm ginger, thinly sliced or smashed
  • 250 grams minced chicken
  • 300 grams silken tofu
  • 2 teaspoons fish sauce
  • 1 teaspoon oyster sauce
  • Salt and pepper to taste
  • 150 ml water
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 stalks green onion, thinly sliced
  • 1 teaspoon sesame oil

Preparation

  1. Crush the silken tofu with a fork.

  2. Heat vegetable oil over medium heat. Sauté garlic and ginger until fragrant.

  3. Add minced chicken. Cook until the chicken changes color.

  4. Add fish sauce, oyster sauce, salt, and pepper. Stir well.

  5. Add water. Cook until the water boils.

  6. Add the crushed tofu. Stir well.

  7. Add the cornstarch mixture and water. Stir until the sauce thickens, then remove from heat.

  8. Add green onion and sesame oil. Stir well.

  9. Serve with warm white rice.
