Crispy Indonesian Anchovy Fritters

Ingredients

  • 100 g rice flour
  • 50 g tapioca flour
  • 1 egg yolk
  • 250 ml coconut milk
  • 3 lime leaves, thinly sliced
  • 50 g dried anchovies
  • Oil for frying

Spice paste

  • 2 inches turmeric
  • 1 tsp roasted coriander
  • 2 candlenuts
  • 1 inch greater galangal

Preparation

  1. Mix the rice flour, tapioca flour, egg yolk, coconut milk, lime leaves, salt, and spice paste until well combined.

  2. Take a spoonful of the batter, add a pinch of anchovies, and fry in hot oil until cooked. Drain on paper towels.
