Crispy Indonesian Anchovy Fritters
Ingredients
- 100 g rice flour
- 50 g tapioca flour
- 1 egg yolk
- 250 ml coconut milk
- 3 lime leaves, thinly sliced
- 50 g dried anchovies
- Oil for frying
Spice paste
- 2 inches turmeric
- 1 tsp roasted coriander
- 2 candlenuts
- 1 inch greater galangal
Preparation
Mix the rice flour, tapioca flour, egg yolk, coconut milk, lime leaves, salt, and spice paste until well combined.
Take a spoonful of the batter, add a pinch of anchovies, and fry in hot oil until cooked. Drain on paper towels.
