Indonesian Beef and Offal Soup
Ingredients
- 1800 ml water
- 250 g beef
- 250 g beef lungs
- 250 g beef tripe
- 1 stalk lemongrass, smashed
- 3 kaffir lime leaves
- 2 bay leaves
Ground spices
- 10 shallots
- 5 garlic cloves
- 3 red chilies, seeds removed
- 2 cm galangal
- 4 roasted candlenuts
- 1 tablespoon ground coriander
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon roasted cumin
Other seasonings
- 65 ml coconut milk
- salt, to taste
- sugar, to taste
- stock powder, to taste
Accompaniments
- green onions
- fried shallots
- tomato
- chili paste or whole boiled bird's eye chilies
- melinjo crackers
Preparation
Boil the cleaned beef with lemongrass, bay leaves, and kaffir lime leaves.
Boil tripe and lungs until half tender, discard the water, drain, and add to the beef mixture.
Sauté the ground spices until fragrant and fully cooked, then add to the boiling meat mixture.
Add coconut milk, salt, sugar, and stock powder.
Cook on low heat until the meat is tender.

Serve hot on rainy days for a comforting meal.
