Easy Homemade Vegan Chickpea Gnocchi

Ingredients

  • 1 can (220g) chickpeas
  • 65g flour
  • 2 tbsp cornstarch
  • a pinch of salt
  • 40ml water

Preparation

  1. Process all ingredients into a dough using a hand blender or food processor.

  2. Knead the dough again on a floured surface, cut in half, and roll into long sausages.

  3. Cut the sausages into small pieces and optionally make patterns with a fork.

  4. Cook the gnocchi in salted water until they float to the top.

Serving suggestions

  1. Serve with a sauce of your choice, such as pesto rosso.
