Easy Homemade Vegan Chickpea Gnocchi
Ingredients
- 1 can (220g) chickpeas
- 65g flour
- 2 tbsp cornstarch
- a pinch of salt
- 40ml water
Preparation
Process all ingredients into a dough using a hand blender or food processor.
Knead the dough again on a floured surface, cut in half, and roll into long sausages.
Cut the sausages into small pieces and optionally make patterns with a fork.
Cook the gnocchi in salted water until they float to the top.
Serving suggestions
Serve with a sauce of your choice, such as pesto rosso.
