Easy Thai Mango Sticky Rice
Ingredients
- 3 ripe mangoes
- 1.5 cups sweet rice
- 2 cups water
- 1 can coconut milk
- 1 cup sugar
- pinch of salt
- 1 tablespoon cornstarch
- 1 tablespoon water
Preparation
Soak the sweet rice in water for at least 30 minutes
Drain the rice and steam it until fully cooked and sticky
In a saucepan, combine coconut milk, sugar, and salt, then heat until the sugar dissolves
Mix cornstarch with water to form a slurry
Add the slurry to the coconut mixture and cook until thickened
Slice the mangoes
Serve the sticky rice topped with sliced mangoes and drizzle with the coconut sauce
