Easy Thai Mango Sticky Rice

Ingredients

  • 3 ripe mangoes
  • 1.5 cups sweet rice
  • 2 cups water
  • 1 can coconut milk
  • 1 cup sugar
  • pinch of salt
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Preparation

  1. Soak the sweet rice in water for at least 30 minutes

  2. Drain the rice and steam it until fully cooked and sticky

  3. In a saucepan, combine coconut milk, sugar, and salt, then heat until the sugar dissolves

  4. Mix cornstarch with water to form a slurry

  5. Add the slurry to the coconut mixture and cook until thickened

  6. Slice the mangoes

  7. Serve the sticky rice topped with sliced mangoes and drizzle with the coconut sauce
