Homemade Marinated Artichoke Hearts
Ingredients
- 4 1/2 cups water
- 1 1/2 cups white wine vinegar
- 2 tablespoons kosher salt
- 1 1/2 tablespoons granulated sugar
- 1 tablespoon whole peppercorns
- 2 large garlic cloves, unpeeled
- 2 bay leaves
- 4 medium artichokes or 10 baby artichokes
Marinade
- 1 1/2 cups olive oil
- 1/2 cup neutral oil, such as avocado oil
- 3/4 cup white wine vinegar
- 1 lemon, peeled with a vegetable peeler and juiced
- 1 tablespoon dried oregano
- 1 teaspoon whole fennel seeds
- 1/2 teaspoon crushed red pepper flakes
- 2 whole peeled garlic cloves
- 1 teaspoon kosher salt
Preparation
Prepare the artichoke cooking liquid by combining water, white wine vinegar, kosher salt, granulated sugar, whole peppercorns, unpeeled garlic cloves, and bay leaves in a pot
Trim and clean the artichokes, then cook them in the prepared liquid until tender
While the artichokes are cooking, make the marinade by mixing olive oil, neutral oil, white wine vinegar, peeled and juiced lemon, dried oregano, whole fennel seeds, crushed red pepper flakes, whole peeled garlic cloves, and kosher salt
Once the artichokes are cooked and cooled, transfer them to the marinade and let them sit for at least several hours or overnight to absorb flavors
