Homemade Marinated Artichoke Hearts
Ingredients
Artichoke prep
- 4 1/2 cups water
- 1 1/2 cups white wine vinegar
- 2 tablespoons kosher salt
- 1 1/2 tablespoons granulated sugar
- 1 tablespoon whole peppercorns
- 2 large garlic cloves, unpeeled
- 2 bay leaves
- 4 medium artichokes or 10 baby artichokes
Marinade
- 1 1/2 cups olive oil
- 1/2 cup neutral oil, such as avocado oil
- 3/4 cup white wine vinegar
- 1 lemon, peeled with a vegetable peeler and juiced
- 1 tablespoon dried oregano
- 1 teaspoon whole fennel seeds
- 1/2 teaspoon crushed red pepper flakes
- 2 whole peeled garlic cloves
- 1 teaspoon kosher salt
Preparation
Combine the artichoke prep ingredients in a pot and bring to a boil
Add the artichokes and cook until tender
Prepare the marinade by mixing all marinade ingredients together
Place the cooked artichokes in the marinade and let them marinate
Serving suggestions
Use in antipasti platters, add to salads, or include in sandwiches
