Shrimp Tartare with Black Grapes and Black Garlic Cream

Ingredients

  • 4 large shrimp
  • 4-5 seedless black grapes
  • 30g black garlic
  • 8ml sunflower seed oil
  • 12ml warm water
  • extra virgin olive oil
  • Maldon salt to taste

Herbs

  • Red Sorrel
  • Amaranth
  • Mexical Marigold

Preparation

  1. In a plastic container with high sides, blend the black garlic with sunflower seed oil and warm water using an immersion blender until a stable, velvety cream is obtained. Then put the cream in a piping bag.

  2. Clean the shrimp by removing the head, shell, and vein. Chop them into tartare and season in a bowl with extra virgin olive oil and salt.

  3. Slice the black grapes thinly with a sharp knife.

  4. Arrange the shrimp tartare, sliced grapes, and black garlic cream on a plate to serve.
