Shrimp Tartare with Black Grapes and Black Garlic Cream
Ingredients
- 4 large shrimp
- 4-5 seedless black grapes
- 30g black garlic
- 8ml sunflower seed oil
- 12ml warm water
- extra virgin olive oil
- Maldon salt to taste

- Red Sorrel
- Amaranth
- Mexical Marigold
Preparation
In a plastic container with high sides, blend the black garlic with sunflower seed oil and warm water using an immersion blender until a stable, velvety cream is obtained. Then put the cream in a piping bag.
Clean the shrimp by removing the head, shell, and vein. Chop them into tartare and season in a bowl with extra virgin olive oil and salt.
Slice the black grapes thinly with a sharp knife.
Arrange the shrimp tartare, sliced grapes, and black garlic cream on a plate to serve.
