Garlic Sesame Soba Noodle Bowl
Ingredients
Bowl
- 100g soba noodles
- 2 tbsp neutral cooking oil
- 200g mushrooms, sliced
- 160g edamame, frozen
- 2 large handfuls kale, roughly chopped
- 4 radishes, sliced
- 1 tbsp tamari
- salt + pepper, to taste
- sesame seeds
- sliced spring onion
Sauce
- 3 cloves minced garlic
- 2 tsp toasted sesame oil
- 2 tsp sriracha
- 2 tbsp tamari
- 1 tbsp dark soy sauce
- 1 tbsp maple syrup
- 1 tbsp lime juice
Preparation
In a small bowl, stir together sauce ingredients.
Prep veggies.
Cook soba noodles in a pot of boiling water according to package instructions.
In a wok or frying pan, heat oil over medium high heat and cook mushrooms until golden on both sides.
Add radishes and cook for a few minutes.
Add edamame and cook until warmed through and bright green.
Season and add tamari.
Stir in kale and cook until it begins to wilt.
Drain soba and return to pot, then toss in three-quarters of the sauce.
Divide into two bowls and top with veggie stir-fry.
Drizzle with remaining sauce and sprinkle with sesame seeds and spring onion.
