Chicken Salad with Tzatziki Sauce

Ingredients

  • 1-2 chicken fillets
  • 2-3 tablespoons soy sauce
  • Curry powder or gyros seasoning to taste
  • 200 grams cherry tomatoes
  • Iceberg lettuce or lamb's lettuce
  • 1 green cucumber
  • 1 red onion

Tzatziki sauce

  • 1 fresh cucumber
  • 2 pickled cucumbers
  • 130 grams Greek yogurt
  • 1 small garlic clove
  • Chopped parsley to taste
  • Lemon juice to taste
  • Salt to taste
  • Pepper to taste
  • Optional: sugar to taste

Optional dressing

  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon mustard
  • Salt to taste
  • Pepper to taste
  • Herbs de Provence to taste

Preparation

  1. Cut 1-2 chicken fillets into thin pieces, coat with 2-3 tablespoons soy sauce and sprinkle with curry powder or gyros seasoning. Let marinate for 30 minutes, then fry until golden.

  2. Grate one fresh cucumber and two pickled cucumbers, squeeze out excess moisture, and mix with 130 grams Greek yogurt, one small garlic clove, chopped parsley, and lemon juice to taste. Season with salt and pepper, and optionally add a bit of sugar.

  3. Optionally, mix 2 tablespoons mayonnaise, 2 tablespoons ketchup, and 1 teaspoon mustard. Season with salt, pepper, and herbs de Provence.

  4. In a bowl, combine iceberg lettuce or lamb's lettuce with half of the tzatziki sauce. Add the cooked chicken, 200 grams halved cherry tomatoes, one green cucumber cut into cubes, and sliced red onion. Spread the remaining tzatziki sauce on top, and if using the optional dressing, drizzle it over the salad just before serving.

Tips

  1. Originally, this salad was intended to have only tzatziki sauce, but adding the second sauce can enhance it; however, you can stick with just tzatziki if preferred.
