Fava Bean Salad with Tofu Feta

Ingredients

  • 340g peeled fava beans
  • 130g semolina
  • 1 zucchini
  • 1 chopped shallot
  • a bunch of chopped mint

Tofu feta

  • 250g firm tofu
  • 120 ml water
  • 30 ml lemon juice
  • 30 ml apple cider vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon dried oregano or herbs de Provence
  • 3-4 tablespoons olive oil

Preparation

  1. Cube the tofu and combine it with water, lemon juice, apple cider vinegar, sea salt, dried oregano or herbs de Provence, and olive oil; marinate for at least 30 minutes.

  2. Peel and blanch the fava beans.

  3. Cover the semolina with boiling water and let it absorb.

  4. Grill the zucchini in a pan until cooked.

  5. Assemble the salad by mixing the fava beans, semolina, grilled zucchini, chopped shallot, chopped mint, and marinated tofu feta.
