Lemon Basil Chickpea Salad
Ingredients
- 15 ounce cans chickpeas, drained and rinsed
- 4 ounces feta cheese
- 1/2 cup finely diced red onion
- 1 avocado, diced
- 1/4 cup chopped basil
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/2 tsp lemon zest
- 1 tbsp honey
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Preparation
Drain and rinse the chickpeas.
Pat them dry.
Add the chickpeas to a large bowl and set aside.
In a small bowl, whisk together the olive oil, lemon juice, lemon zest, spices, and honey.
Add the onion, basil, feta, and the lemon mixture to the bowl with chickpeas.
Stir everything together and serve with fresh pita bread, pita chips, or in a wrap.
