Fresh Guacamole with Tomatoes and Lime

Ingredients

  • 250g avocado (2 avocados)
  • 50g cherry tomatoes, chopped
  • 25g red onion, minced
  • 10g coriander, chopped
  • 10g extra virgin olive oil
  • 2.5g maldon sea salt
  • Juice of 2 limes

Preparation

  1. Remove the flesh from the avocados and mash with a fork

  2. Squeeze some lime juice directly onto the avocados to slow down oxidation

  3. Add all your ingredients and mix well

  4. Season to taste, especially with lime juice

  5. Serve as a dip or on toast

Tips

  1. Use premium quality avocados for the best guacamole

  2. Australian Hass avocados ripen from green to purple-black; press gently to check ripeness: hard means ready in 2-3 days, firm in 1-2 days, soft means ready to eat
