Cucumber-Infused Avocado Guacamole Dip
Ingredients
- 2 large ripe avocados
- 10 yellow cherry tomatoes
- 4 spring onions
- 1 small green chilli
- 10g coriander leaves
- 1 large lime
- 1/2 cucumber
- Salt, to taste
Preparation
Halve and stone the avocados, scoop the flesh into a wide bowl, finely slice the tomatoes, spring onions, and deseeded chilli, pick and finely chop the coriander leaves, and grate the cucumber using the wide side of a box grater.
Lightly mash the avocado with a fork, squeeze over the lime juice, and fold in the cherry tomatoes, spring onions, and chilli.
Fold through the coriander and grated cucumber, taste and season with salt until it tastes good.
Serve with toast, tacos, crackers, or a spoon.
Tips
Adding cucumber makes the guacamole stretch further and taste fresher.
This recipe serves 4 and is ideal for summer, perfect on toast, tacos, or with tortilla chips.
