Quick Vegan Quesadillas in 15 Minutes
Ingredients
Spread mixture
- 400g cooked white beans
- 1 chili pepper
- 1/2 bell pepper
- 2 garlic cloves
- 90g cherry tomatoes
- a bunch of parsley, mint, or cilantro
- 2 tsp cumin
- 1/2 tsp ground coriander
- 1 tsp smoked paprika
- salt and pepper
- a handful of arugula or other peppery salad greens
Other
- 8 tortillas
- leftover rice
- grated vegan cheese
- yogurt
- lime juice
- any other desired toppings
Preparation
Put all the spread ingredients in a blender and pulse several times until spreadable but not completely smooth.
Heat a skillet with a little oil. Meanwhile, spread the mixture on a tortilla then add the cooked rice, grated vegan cheese, and any other toppings.
Place another tortilla on top and put in the skillet. Cook for a few minutes on each side until done.
