Quick Vegan Quesadillas in 15 Minutes

Ingredients

Spread mixture

  • 400g cooked white beans
  • 1 chili pepper
  • 1/2 bell pepper
  • 2 garlic cloves
  • 90g cherry tomatoes
  • a bunch of parsley, mint, or cilantro
  • 2 tsp cumin
  • 1/2 tsp ground coriander
  • 1 tsp smoked paprika
  • salt and pepper
  • a handful of arugula or other peppery salad greens

Other

  • 8 tortillas
  • leftover rice
  • grated vegan cheese
  • yogurt
  • lime juice
  • any other desired toppings

Preparation

  1. Put all the spread ingredients in a blender and pulse several times until spreadable but not completely smooth.

  2. Heat a skillet with a little oil. Meanwhile, spread the mixture on a tortilla then add the cooked rice, grated vegan cheese, and any other toppings.

  3. Place another tortilla on top and put in the skillet. Cook for a few minutes on each side until done.
