Best Mexican Style Veggie Burger

Ingredients

  • 1 cup shredded carrots
  • 1/2 cup diced red onion
  • 2 15-oz cans black beans drained and rinsed
  • 1 cup walnuts
  • 1 1/2 cups cooked quinoa
  • 1 cup bread crumbs
  • 1/4 cup ground flax
  • 1/2 cup water
  • 2 tbsp Mexican seasoning - I used chili lime
  • 1/2 cup finely chopped cilantro
  • 1 tsp salt

Preparation

  1. Combine water and ground flax, stir and set aside.

  2. In a large bowl, add beans and mash, leaving roughly one quarter of the beans whole.

  3. Place the walnuts in a food processor and pulse until fine and crumbly, being careful not to over pulse.

  4. Add the flax mixture and all other ingredients to the bowl and mix well.

  5. Shape into patties.

  6. Refrigerate the burgers for 30 minutes to make them firmer.

  7. Cook over stovetop for 3 to 4 minutes per side in a bit of oil or bake at 350 degrees for 30 to 35 minutes, flipping halfway through.

Tips

  1. Serve the burgers on a bun, tortilla, or lettuce wrap for a delicious meal or snack.
