Mexican Corn with Cheese and Herbs

Ingredients

  • one can of cooked corn
  • one tablespoon butter
  • one cup sliced mushrooms
  • one tablespoon lemon juice
  • one teaspoon thyme
  • two tablespoons mayonnaise
  • one cup pizza cheese

Preparation

  1. Melt butter in a skillet over medium heat.

  2. Add corn and mushrooms, and sauté until mushrooms are tender.

  3. Stir in lemon juice, thyme, and mayonnaise until well combined.

  4. Add cheese and cook until melted.

  5. Serve warm.
