Traditional Arabian Licorice Drink

Ingredients

  • 1 cup dried licorice
  • 1 tablespoon baking soda
  • 6-8 cups cold water

Preparation

  1. In a wide glass or ceramic bowl, place the licorice, add three tablespoons of water, add the baking soda, and stir until the ingredients are well mixed and the licorice is moist and sticky like dough.

  2. Cover the bowl with a clean mesh and place it in a sunny spot for one to two hours until it ferments.

  3. Place the mixture in a piece of cheesecloth and tie it well to form a bundle.

  4. Place the cold water in a deep bowl or serving pitcher, then add the licorice bundle and let it soak for one hour. Alternatively, place the bundle under a dripping faucet to collect the extract.

  5. Remove the licorice bundle from the pitcher and serve cold.
