White Beans with Red Sauce
Ingredients
- 3 tablespoons oil
- 1 large onion, finely chopped
- 3 cloves garlic, crushed
- 1/4 teaspoon ginger, crushed
- 1 chili pepper, chopped
- 3 cups tomatoes, peeled and chopped
- 2 tablespoons tomato paste
- 4 cups broth
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups white beans
For serving
- Chopped cilantro
Preparation
Heat the oil in a medium-sized pot over medium heat.
Add the onion and stir until it turns light golden.
Add the garlic, ginger, chili, tomatoes, tomato paste, sugar, salt, and pepper. Cook the sauce for 10 minutes to thicken, and add broth if it is too thick.
Add the beans and cook for 5 minutes only. Do not overcook the beans.
Add the cilantro and serve alongside grilled meats.
