Sweet and Savory Fosforitos Puff Pastry
Ingredients
Dough mixture
- 500 grams flour
- 250 milliliters water
- 40 grams butter or margarine
- 1 tablespoon salt
Fat block
- 200 grams butter or margarine
- 40 grams flour
Sweet glaze
- 1/2 egg white
- 4 tablespoons powdered sugar
- a few drops of lemon
Preparation
Start by making the dough mixture and let it rest in the refrigerator to relax before rolling
Shape the fat block into a flat rectangle and chill it in the refrigerator
Roll out the dough into a rectangle and place the chilled fat block in the center, smaller in size
Fold the dough edges over to cover the four sides of the fat block and then fold in half
Roll out the dough again into another rectangle and fold it into three like a booklet
Chill the dough in the refrigerator and repeat the rolling and folding process four times, with at least 20 minutes of resting in between each time, always turning half a turn to the right
Finally, roll the dough to a thickness of 3 millimeters, trim the edges, cut into rectangles, poke with a fork, and cover with a mixture of egg white, powdered sugar, and a few drops of lemon, aiming for a consistency that is neither too liquid nor too firm
Chill the prepared pastries in the refrigerator for 10 minutes before baking
Bake in the oven at 180 degrees Celsius until lightly golden

Chill the fat block in the refrigerator after shaping it
Making the dough a day in advance improves the results
