Healthier Sweet Potato and Bean Quesadillas

Ingredients

  • 4 Medium whole wheat tortillas
  • 1 medium Sweet Potato
  • 1 cup guacamole
  • 1/2 Cup cannellini beans
  • 1 Red Pepper
  • 1 yellow pepper
  • 0.5 yellow onion
  • 2 tbsp Taco Seasoning
  • 1 Cup shredded cheese
  • 2 teaspoon butter

Preparation

  1. Cube the sweet potato and microwave it for 10 minutes until tender, then mash it.

  2. Sauté diced peppers and onions until soft, around 5-7 minutes.

  3. Add beans and taco seasoning, cook for 3 minutes.

  4. Assemble the quesadilla: spread sweet potato on half of the tortilla, guacamole on the other half, and top with the veggie/bean mix and cheese.

  5. Cook in a warm pan until browned and cheese melts. Fold in half, slice, serve with toppings, and enjoy.
