Healthier Sweet Potato and Bean Quesadillas
Ingredients
- 4 Medium whole wheat tortillas
- 1 medium Sweet Potato
- 1 cup guacamole
- 1/2 Cup cannellini beans
- 1 Red Pepper
- 1 yellow pepper
- 0.5 yellow onion
- 2 tbsp Taco Seasoning
- 1 Cup shredded cheese
- 2 teaspoon butter

Preparation
Cube the sweet potato and microwave it for 10 minutes until tender, then mash it.
Sauté diced peppers and onions until soft, around 5-7 minutes.
Add beans and taco seasoning, cook for 3 minutes.
Assemble the quesadilla: spread sweet potato on half of the tortilla, guacamole on the other half, and top with the veggie/bean mix and cheese.
Cook in a warm pan until browned and cheese melts. Fold in half, slice, serve with toppings, and enjoy.
