Braised Beef Short Ribs with Parsley Sauce
Ingredients
- Beef short ribs
- Salt
- Flour
- Onion
- Carrot
- Garlic
- Red grape juice
- Bay leaf
- Water
Parsley sauce
- Parsley
- Garlic
- Red onion
- Lemon juice
- Salt
- Olive oil
Preparation
Salt the ribs and coat them in flour, then sear in a hot pot until sealed
Set the seared meat aside
In the same pot, add onion, carrot, and garlic, and sauté the vegetables
Deglaze the pot with red grape juice
Return the meat to the pot, add bay leaf and water, and simmer on low heat for 2.5 hours
Once the meat is cooked, strain the liquid and transfer to a new pot, then boil until it reaches sauce consistency

Mix finely chopped parsley, garlic, and red onion with lemon juice, salt, and olive oil
