Chocolate Black Rice Pudding

Ingredients

  • 1 cup short grain black rice
  • 3 cups unsweetened almond milk (store-bought or homemade)
  • 1/2 teaspoon cinnamon
  • 1 pinch Himalayan sea salt
  • 1/4 cup maple syrup or rice malt syrup
  • 2 tablespoons raw cacao powder

Preparation

  1. In a medium pot, add the rice, almond milk, cinnamon, and sea salt.

  2. Bring the mixture to a boil, then reduce the heat to low and cover with a lid.

  3. Cook for about an hour or until the rice is tender, stirring occasionally to prevent sticking. The cooking water will turn black.

  4. Once the rice is tender, remove the pot from the heat and stir in the maple syrup and cacao powder.

  5. If the pudding is too thick, thin it out with a little more almond milk.

  6. Serve warm or allow to cool and refrigerate for later, and top with optional berries and cacao nibs or chocolate chips.
