Chocolate Black Rice Pudding
Ingredients
- 1 cup short grain Black Forbidden rice
- 3 cups unsweetened or homemade almond milk
- 1/2 teaspoon cinnamon
- 1 pinch Himalayan sea salt
- 1/4 cup pure maple syrup or rice malt syrup
- 2 tablespoons raw cacao powder
Optional toppings

- cacao nibs
- vegan dark chocolate chips
- extra drizzle of maple syrup
Preparation
In a medium pot add the rice, almond milk, cinnamon, and sea salt
Bring the mixture to a boil, then reduce the heat to low, and place a lid on the pot
Cook for about an hour, or until the rice is tender, stirring occasionally to prevent sticking
Once the rice is tender, remove the pot from the heat and stir in the maple syrup and cacao powder
If the pudding is too thick, thin it out with a little more almond milk
Serve warm or chilled, topped with berries and cacao nibs or chocolate chips

This pudding is FODMAP-friendly and easy to digest
It can be served warm or cold as a dessert or breakfast
Black rice contains antioxidants similar to blueberries and offers health benefits like brown rice
